If the egg yolk bulges but the egg white looks cloudy after breaking an egg, it indicates that the egg is very fresh in general. The cloudy appearance is caused by dissolved carbon dioxide in the egg white. For a newly laid egg, a considerable amount of carbon dioxide dissolves in the egg white and turns it cloudy. As the egg ages, carbon dioxide dissipates and the egg white becomes clearer.
